Happy Saturday! Wanted to share one of my favorite weekend breakfasts with you! I will add this to my recipe page 🙂

I love my breakfast food! Here is another go-to for me?

Notice – the PB2! It has been my thing as of late! Fewer calories, 3 ingredients, and delicious – Check, Check, Check!

Makes 2 pancakes (or one really large one) – All together the recipe is 1 red, 1 yellow, and 1 green on the 21 Day Fix Meal Plan


  • 3/4 Cup Liquid Egg Whites
  • 1/2 Cup Quick Oats
  • 1 Cup Spinach
  • 1 Packet Stevia
  • 1 tsp Cinnamon (optional)
  • 1 TBSP PB2 (optional)

Blend ingredients together for about 30 seconds until smooth. Cook on a greased skillet. Flip the pancake when cooked through(bubbles are present on one side. Serve with yogurt, peanut butter, nuts and/or maple syrup! Yum!

Everyone says the green pancakes looks gross, but it is so awesome!

Now off for my first long run after hurting my foot a couple weeks ago (although we did run 8 miles yesterday so I guess I’m back!). Be looking out this week for more posts on marathon training and prep!!
