This easy recipe for Paleo Pumpkin Banana Muffins combines simple and whole ingredients to create a tasty addition to any breakfast. I like to have these on hand to grab before a morning workout or enjoy with a hot cup of coffee. I will often make a large batch of muffins and freeze them so I always have some on hand! These are baby and toddler friendly so enjoy with everyone in your family! 

 

I can’t tell you how wonderful and easy to modify these muffins are. I have been working on waking up to workout before the baby and Aaron wake in the morning. It’s a big goal of mine and I have come to realize that I feel better and I am a better wife and mom when I can wake up and have me time in the morning. The thing about waiting to workout for later in the day is – 1) It often will never happen and 2) I never feel like I have been productive until I get showered and dressed.

I am realizing that a morning workout is key in my productivity and sanity during the day. However, that means waking up before 7 am to workout and get a quiet time in. For me, with gym transport, that means that I am waking up at 5 or before. Like I said, so far this is a goal and something I am working on. Not there yet but getting there!

Another thing that I have realized about myself is that I need food and coffee in my system to function on any level in the morning; let alone workout. So a grab and go healthy option that I feel good about putting in my body to start my day is an absolute must. Muffins are absolutely awesome for this and when I decided to go towards a Paleo lifestyle, I immediately began to search for easy muffin or breakfast bread option. Muffins are also awesome because they have a set portion size. I can grab it on my way out the door (along with my coffee, obviously) and I am set to go!

I have been experimenting with a lot of different Paleo Muffin Recipes. Most Paleo pastries require a number of different flours and can become rather expensive to create. When I am looking for different recipes this is one of the main factors that I keep in mind, as I am a baker on a budget. I want to eat whole foods, I want something simple and easy to grab, and I don’t want my recipes to break the bank. That is a large order when it comes to finding many Paleo recipes. Coconut flour is a flour that is a bit cheaper and when you use it, you won’t need a lot. It is a very absorbent flour and so most recipes that use this flour requires more eggs and more liquids.

Another thing I like about this recipe is that you can modify the amount of sugar in the recipe. Granted, it will affect the taste but if you are doing the whole 30, the banana provides a small amount of sweetness to do the trick, still taste great in coffee and be that easy morning fuel required before a morning workout.

Instructions
  1. Preheat oven to 350 degrees and grease muffin tins
  2. Mix wet ingredients - pumpkin, banana, coconut oil, vanilla, and eggs
  3. Mix dry ingredients - coconut flour, cinnamon, cloves, baking powder, baking soda, salt, coconut sugar
  4. Pour dry ingredients into wet ingredients
  5. Fold in walnuts or chocolate chips
  6. Pour evenly into 12 muffins tins
  7. Bake for 20 minutes
