Whole 30 and Paleo Buffalo Chicken Casserole
Whole 30 and paleo friendly! If you are avoiding potatoes, try sweet potatoes.
Cooked and shredded
(Red,yellow or orange) Chopped
Extra Virgin Olive Oil
Preheat oven to 350 degrees. Prepare a 9X13 baking dish with olive oil, butter or ghee.
Microwave potatoes for 3 minutes. Cut into large chunks and put into the food processor or blender until riced or shredded.
Saute onion, celery, and bell pepper in extra virgin olive oil. Once the onion is translucent add spinach and saute until wilted.
Mix chicken, buffalo/hot sauce and mayo together in a bowl.
Whisk eggs. Add in salt, pepper, and onion powder.
Mix egg mix with potatoes and chicken.
Add mix to baking dish. Press down on casserole. Bake for 50 minutes to 1 hour until a crust forms on top.
